This PR updates the local lab tooling so production clones/restores can run in isolated Docker Compose stacks (separate project name, overridable host ports, and local credential overrides), and expands --restore-only to accept snapshot names/paths (including saved .tar.gz snapshots) to avoid repeatedly touching production.
