docs(runtime): align Docker viewer paths and setup guidance - #155

Clarify that local Docker graph inspection uses FalkorDB's built-in browser while production keeps /viewer as the public entrypoint backed by the standalone viewer. Also make Docker commands and Makefile targets consistent so the documented setup flow is runnable as written.
Replace a dead make restart instruction with runnable Docker restart steps and normalize the last remaining docker compose wording in the environment docs. This closes the remaining PR-readiness gaps in the runtime cleanup.
