Add support for Cloudflare vinext - #1

This change updates the Payload CMS Next.js plugin and Admin UI dependency checker to support `vinext`, Cloudflare's Vite-based port of Next.js. - `getNextjsVersion` now falls back to checking `vinext/package.json` if `next/package.json` cannot be resolved. - Admin UI `checkDependencies` logic now includes `vinext` as an allowed but optional dependency, preventing dependency mismatch errors when using `vinext`. - Added a basic test suite for `withPayload.utils`.
