Update the auto-injected Polyfill version

When a .NET Framework or netstandard consumer relies on TUnit.Core's default automatic Polyfill injection instead of declaring the package explicitly, the packaged src/TUnit.Core/TUnit.Core.targets still sets _TUnitPolyfillVersion to 11.4.0 and uses it for both Version and VersionOverride. Consequently, those consumers will not receive the 11.4.1 fix despite this dependency update; update that embedded version alongside the central and template references.
