  • Renames lightspeed to intelligent-assistant in documentation, configuration files, and compose files.
  • Updates intelligent-assistant plugin to use Quay instead of registry to match what is in the next catalog image and flips back to enabled by default

@Jdubrick I noticed that these failures are also occurring on other PRs targeting dev. I've filed https://redhat.atlassian.net/browse/RHDHBUGS-3687 to track this issue. @rm3l I have rebased. I tried to migrate to the ref:// way, but it was failing on install for intelligent-assistant, likely because it is disabled in the DPDY (which we do on purpose iirc). Is this intended?

@rm3l my catalog image locally was outdated, repulling it let the ref:// work. I've made the necessary change now
