Rationale for this change
Test the Iceberg 1.12.0 RC2 (staged in the Nexus repo
orgapacheiceberg-1286) against the PyIceberg integration tests.ICEBERG_VERSIONin the Spark image to 1.12.0.ICEBERG_MAVEN_MIRRORso only the Iceberg jars are fetched from the staging repo.Are these changes tested?
