Managing topics

I am working of several different projects, which are all in different stages: from simply a title to multiple chapters.

I would like to begin a new project (to do). How do I do this?
I see several projects that I have started in the drop-down folder with-in the Longform app, but I am not sure where they reside, or how to add or delete projects within Longform.
