[Windows, NavigationPage] The "Back" button is almost invisible

Description

I use NavigationPage. Since MAUI 9.0.110, the Back button on Windows has become barely visible, as if it's only 20% visible. It's very difficult to notice, and in high-light conditions, it's completely invisible. The button color has not changed and is used by default.

I'd like to take this opportunity to remind you that the problem with the "Back" button when using NavigationPagehas been going on for a long time. (issue 18907)

Steps to Reproduce

1. Create a project with the latest version of MAUI Controls with two pages
2. Use NavigationPage for navigation
3. Run the app and go to the second page
4. Note the color of the Back button
5. Install MAUI Controls version 9.0.100
6. Repeat the steps
7. Notice the difference

This issue has been validated using Visual Studio 18.2.0 with MAUI versions 9.0.100, 9.0.110, 9.0.120, 10.0.0 and 10.0.40. It can be reproducible from 9.0.110 version on the Windows platform.

This is not a regression — the IconColor is being applied correctly after the change in PR #25627.

The back button appears "almost invisible" because the default project template Styles.xaml sets IconColor to Gray200 for NavigationPage in Light theme, which has poor contrast against the white toolbar. Previously, this style was not being picked up due to a missing fallback in the icon color resolution.

Workaround: In your Styles.xaml, change the NavigationPage style to use a darker color (e.g., Black) for Light theme:
