Use hindsight instead of openmemory as the example plugin - #11

OpenMemory is leaving the registry. Examples that only need a plugin name now use hindsight; examples that depend on something hindsight does not have (stdio MCP over docker exec, a required env var) use a neutral example-memory plugin or the registry's github plugin. The docs/legacy records stay as written.
Fixture names only; every case and assertion is unchanged.

The status and search frames are taller: atk status now prints a Repository section, and the registry lists 20 plugins.

OpenMemory is leaving the registry (Remove plugin 'openmemory'), so ATK's docs, demo tapes and tests stop naming it.
