Fix hash AOT PROFILE=8.4 compile SIGSEGV and pack(null) compile crash

Summary

• Regression: hash_hmac(null $key)/hash_update(null) TypeError under PROFILE=8.4 — Zend DEP+coerce (re-#20175/#20195, ext/hash/hash.c) #21557: hash() / hash_hmac() / md5() / sha1() SIGSEGV at AOT runtime when PHP_COMPILER_PROFILE=8.4 is set in the compile environment. Root cause: explicit PROFILE changes compile-time NestedJIT helper ABI for StringHashCrypto prelinked helpers; the default unset profile (8.4.0-dev) does not hit the broken path. Fix: exclude PHP_COMPILER_PROFILE from user-script AOT compile env in bin/compile.php and AotTest::COMPILE_EXCLUDED_ENV (runtime PROFILE still applies).
• Regression: hash_hmac()/hex2bin()/convert_uuencode()/pack()/sscanf(null) TypeError under PROFILE=8.4 — Zend DEP+coerce (ext/hash, string.c) #21209: pack("a*", null) with a compile-time null literal SIGSEGV'd during bin/compile.php. Fix: JitPack::writeArg() coerces null value operands to empty string (Zend quiet null→'' per ext/standard/pack.c).
• Regression: hash()/hash_hmac(null $algo) TypeError under PROFILE=8.4 — Zend DEP+ValueError (re-#21181, ext/hash/hash.c) #21490: Align hash_null_algo_forward84 AOT fixture with Zend 8.4 — null $algo throws ValueError after deprecation, not soft-null.
