stop using CoffeeScript bare mode

bare mode puts everything in globals. we're trying to move away from that (it's very bad practice in JS)

TheBizzle's engine rewrite will involve RequireJS. This is clearly a non-trivial problem that needs to be solved at its root.

It seems there are different views about what the scope of this ticket was.

There are two problems:

• We are using global mutable state
• We are storing that global mutable state at the top level of the global namespace

I was imagining, perhaps naïvely, that this ticket involved fixing both, so that we no longer made any use of global mutable state whatsoever. So I could do "new Engine" and make as many Tortoise engines as I wanted, with each one encapsulating all of its state within itself.

The overhauled engine is bundled up into modules, effectively solving both of these problems. You can get a copy of the state-free function for generating a Tortoise workspace by calling tortoise_require('engine/workspace'). It then requires a few arguments to generate you a nice new workspace.
